Ingredients

For the Dessert

200 ml Buttermilk

40 g Cocoa Powder

1 tsp Vanilla Extract

125 g Light Brown Sugar

100 g Caster Sugar

225 g Plain Flour

50 g Dark Chocolate (Melted)

1.5 tsp Bicarbonate of Soda

2 Eggs

100 ml Sunflower Oil

1 Pinch Sea Salt

150 g Dark Chocolate (Roughly Chopped)

For the Topping

50 g Milk Chocolate (Roughly Chopped)

You can use as many types of different chocolate as you like (including white chocolate)

Method

  1. Melt 50g of dark chocolate in a heat proof bowl and leave to cool.

  2. Roughly chop the chocolate. Add all the remaining ingredients apart from the milk chocolate to a large bowl and mix together. Add the cooled melted chocolate and combine.

  3. Divide the mixture evenly between twelve muffin tins and then scatter the milk chocolate on top. Bake for 20 minutes and then leave to cool.
