1 Pinch Sea Salt

2 Bananas

1 tsp Vanilla Extract

150 g Dark Muscado Sugar

2 Eggs

150 g Plain Flour

200 g Sourdough Starter Discard

2 tsp Baking Powder

100 g Dark Chocolate (Roughly Chopped)

150 g Unsalted Butter (Cubed)

Method

  1. In a large bowl add the bananas and using a fork mash together. Add the sourdough starter and vanilla extract and combine.

  2. In a separate bowl add the butter and sugar and cream together until light and fluffy. Add the eggs one at a time and beat until combined. Add the flour, baking powder and salt and gently fold to combine.

  3. Add the banana mixture to the batter along with the chocolate and mix just until you have an evenly mixed batter. Bake for around 20-25 minutes. Remove from the oven and allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
