Ingredients

For the Main Meal

6 Sausages

1 Leek (Finely Sliced)

3 tbsp HP Sauce

1 Pinch Pepper

1 Pinch Sea Salt

400 g Cannellini Beans

2 Carrots (Diced)

400 g Haricot Beans

400 g Plum Tomatoes

375 g Water

2 tsp English Mustard

For the Side

1 Pinch Pepper

100 g Unsalted Butter

800 g Potatoes (Peeled & Roughly Chopped)

2 tsp English Mustard

1 Pinch Sea Salt

100 ml Full Fat Milk

For the Topping

4 tsp Worcestershire Sauce

200 g Cheddar Cheese (Grated)

Desiree potatoes (red skins) are a good choice for the mashed potato, also adding cheddar cheese on top with a few splashes of worcestershire sauce goes very well!

Sausage Casserole

Method

  1. In a large frying pan, brown the sausages and then put to one side.

  2. To make the mashed potato, peel and chop the potatoes and cook in a large pan of salted boiling water. Drain and leave to steam dry. Add the butter, mustard, milk and season with salt and pepper and mash well until creamy.

  3. Trim, wash and chop the carrots and leaks into small chunks. Stir into the fat from the frying pan and cook until softened, stirring regularly (add a splash of water if needed).

  4. Stir in the HP sauce and mustard into the veg, pour in the beans (including the juice), add the tomatoes, breaking them up as you stir, then add 1 tin's (around 375g) worth of water. Bring to the boil and cook for another 10 minutes and then season with salt and pepper.

  5. Once the mash is cool enough to handle, divide into four compact balls and push them into the stew and then top with grated cheese. Add the sausages back to the stew. Put the pan under the grill and once the cheese starts to melt splash the Worcestershire Sauce on top and continue to cook until the cheese is golden and bubbling.
