Ingredients

For the Snack

245 g Plain Flour

½ tsp Ground Cinnamon

175 g Oats

150 g Light Brown Sugar

1 Pinch Sea Salt

75 g Caster Sugar

1 tsp Bicarbonate of Soda

245 g Raisins

225 g Unsalted Butter (Cubed)

2 Eggs

½ tsp Ground Nutmeg

Method

  1. Cream together the butter and sugars until smooth, then add the eggs one at a time and beat together.

  2. Add the flour, rolled oats, bicarbonate of soda, salt, nutmeg, cinnamon and raisins and then mix until the flour is just incorporated.

  3. Add the dough to an airtight container and chill in the fridge for at least 4 hours.

  4. Make golf size balls from the dough and then place on a lined baking tray 2 inches apart. Bake for 20 minutes and then allow to cool on a wire rack.
