Ingredients

For the Snack

1 tbsp Cocoa Powder

2 Eggs (Whites)

125 g Ground Almonds

150 g Dark Brown Sugar

100 g Dark Chocolate (Melted)

1.5 tsp Vanilla Extract

125 g Pecan Nuts

Method

  1. Blitz the nuts together, then add in a large bowl along with the sugar, cocoa and vanilla extract.

  2. Melt the chocolate on a low heat and then add to the bowl and stir to combine. Add the egg whites and vanilla extract and combine.

  3. On a lined baking tray make small balls and flatten slightly. Bake for 15 minutes or until the biscuits have set and puffed up but are still chewy on the inside. Leave to cool on a wire rack.
