Ingredients

For the Snack

1 Pinch Sea Salt

125 g Golden Syrup

400 g Oats

150 g Dates (Chopped)

200 g Unsalted Butter (Melted)

75 g Pistachio Nuts (Roughly Chopped)

150 g Light Brown Sugar

50 g Coconut Flakes

50 ml Maple Syrup

35 g Seasame Seeds

4 tbsp Water

200g regular oats and 200g rolled oats are a good mixture that can be used.

Method

  1. Toast the pistachios and coconut flakes for 3 minutes. Meanwhile add the dates to a pan with 4 tbsp of water and put on a medium heat and stir until the dates soften.

  2. Add the butter, sugar, golden syrup, maple syrup and salt and stir until melted.

  3. Add the oats, toasted pistachios, coconut flakes and sesame seeds and mix together.

  4. Pour the mixture into a lined brownie tin and using the back of a spoon pat down until evenly distributed. Bake for around 25 minutes and then leave to cool before chilling to ensure the flapjacks set.
