For the Snack

½ tsp Baking Powder

2 Eggs

355 g Plain Flour

1 tbsp Vanilla Extract

¼ Nutmeg (Grated)

2 Pinches Sea Salt

250 g Unsalted Butter (Melted)

400 g Dark Chocolate (Roughly Chopped)

150 g Caster Sugar

1 tsp Bicarbonate of Soda

200 g Light Brown Sugar

Method

  1. Brown the butter and leave to cool.

  2. Combine the butter, sugars, salt, baking powder, bicarbonate of soda, vanilla extract and nutmeg in a large bowl until light and fluffy.

  3. Add the eggs one at a time and beat to combine.

  4. Add the flour and chocolate and mix to form a stiff dough.

  5. Wrap the dough in clingfilm and chill in the fridge overnight.

  6. Divide the dough into 32 balls and arrange on lined baking trays. Bake for around 12-15 minutes.
