Ingredients

For the Dessert

100 g Cherries (Destoned)

150 g Plain Flour

1 tsp Vanilla Extract

2 Eggs

½ tsp Baking Powder

180 g White Chocolate

75 g Light Brown Sugar

25 g Caster Sugar

150 g Unsalted Butter (Melted)

50 g Ground Almonds

1 Pinch Sea Salt

30 g Flaked Almonds

Method

  1. Put the butter in a pan and brown it on a medium heat, allow to cool for a couple of minutes.

  2. Add the sugars and vanilla extract and whisk together until combined.

  3. Add the eggs and combine one at a time.

  4. Add the flour, salt, baking powder and ground almonds.

  5. Add the white chocolate and cherries and mix until combined.

  6. Add to a lined tin, scatter the flaked almonds on top and then bake for 35 mins.
