225 g Currants

1 tsp Ground Ginger

115 g Plain Flour

¼ Nutmeg (Grated)

1 Pinch Sea Salt

115 g Caster Sugar

1 Orange (Zested)

1 Lemon (Zested)

115 g Panko Breadcrumbs

115 g Suet

225 g Raisins

1 Egg

140 ml Full Fat Milk

Method

  1. Grease a large pudding basin or individual small pudding basins depending on how you plan to steam.

  2. Mix all the ingredients together in a large bowl (using only the zest from the lemon and orange) except for the egg and milk. Add the beaten egg and milk and then put the mixture into the basin(s). Cover with aluminium foil or a cloth.

  3. Add water to a pan (should come up halfway to the basin(s)). Bring to the boil and then put on a tight fitting lid and simmer for 3 hours if using a large basin or 1 hour if using small individual basins (top up with water if needed).
