300 g Dark Chocolate

100 g Unsalted Butter

1 Pinch Sea Salt

2 tbsp Cocoa Powder

8 Eggs

200 g Caster Sugar

Method

  1. Add the chocolate and butter to a large saucepan and melt. Leave to cool slightly.

  2. Separate the eggs whites and add a pinch of sea salt in a large bowl. In a separate bowl add the yolks with the caster sugar and mix together until pale and fluffy, then stir in the melted chocolate.

  3. Whisk the egg whites until stiff. Working in batches gently fold into the chocolate mixture, then fold in the cocoa powder.

  4. Pour the batter into a tray with high edges or a tin, spread evenly across and then bake for 15 minutes or until springy to the touch and gooey in the middle.
